Double-Peach Tart

INGREDIENTS
Pastry
1 cup all-purpose flour
1/4 cup confectioners’ sugar
Pinch of salt
1 stick unsalted butter, cut into cubes
3 ounces cream cheese, cut into cubes
Filling
10 small, ripe peaches (about 4 pounds)
1/3 cup unsalted butter (5 1/3 tablespoons), softened
3/4 cup granulated sugar, plus more for sprinkling
2 large eggs
1 teaspoon pure vanilla extract
1/4 cup all-purpose flour
1 1/2 teaspoons cornmeal
1/2 teaspoon cinnamon
1/2 teaspoon freshly grated nutmeg

DIRECTIONS
Spray a 10-inch fluted tart pan with a removable bottom with cooking spray. In a food processor, pulse the flour, sugar and salt until blended. Add the butter and cream cheese and pulse until moist crumbs form. Scrape the crumbs into the tart pan and press them over the bottom and up the side in an even layer. Refrigerate until firm, 20 minutes.
Preheat the oven to 325°. Line the pastry with foil and fill with pie weights or dried beans. Bake for 25 minutes, until just set. Carefully remove the foil and weights and bake for 15 minutes longer, until the crust is completely set and lightly golden.
Bring a large saucepan of water to a boil and fill a large bowl with ice water. Score the peach bottoms with an X. Add a few peaches at a time to the boiling water and blanch for 10 seconds; transfer to the ice water. Drain and peel the peaches. Cut 6 peaches into quarters and slice the remaining 4 peaches.
In a bowl, using an electric mixer, beat the butter with the 3/4 cup of sugar until creamy. Add the eggs and vanilla and beat until smooth, then beat in the flour, cornmeal, cinnamon and nutmeg. Spread the filling in the crust and arrange the peach quarters on top in 2 concentric circles. Sprinkle the peaches with sugar and bake for 1 hour and 40 minutes, until the filling is firm and lightly browned. Transfer to a rack to cool.
Remove the tart ring and slide the tart onto a plate. Top with the sliced peaches, sprinkle with sugar and serve.

Grilled Garlic Scapes

A favorite from Erik Eacker of Ledge Ends Farm.
Ingredients:
Garlic scapes
Olive oil
Salt
Fresh ground black pepper

Directions:
Start your grill, toss the scapes with the oil, salt and pepper, put them over medium heat (I would recommend some kind of mesh or perforated grilling pan) and cook until very lightly blackened. Serve as a great side dish for all your summer grilling.

Steamed Clams Paired with Zenato Lugana

Ingredients:

Garlic (2-4 cloves depending on size)

2 TBSP extra virgin olive oil

12-24 Littleneck clams

1 cup dry white wine

1TBSP flat leaf parsley

Linguini, or crusty bread

Fresh parmigiano cheese, grated

Salt and Pepper

Lemon

In a deep skillet, saute 1 TBSP of minced garlic in 2 TBSP of extra virgin olive oil, for approximately 2 minutes, or until garlic is fragrant.  Then add 12-24 washed littleneck clams.  Turn the heat up to high, cover and saute for approximately 1 minute.  Add 1 cup of dry white wine and saute, covered until all clams open (discard any unopened clams).  Add 1 TBSP of chopped flat leaf parsley.  Broth will be remaining in the pan.  Serve clams over linguini or alone and lightly coated with remaining broth, a nice crusty loaf of bread from either Seven Stars or Olga’s Cup and Saucer is great dipped in the broth.  Serve with grated fresh parmigiano reggiano, salt and pepper to taste, and a squeeze of lemon isn’t a bad idea either.

Enjoy!!
